3 cups of milk
1 cup of espresso or very strong coffee
4oz bittersweet chocolate
3 tablespoons of sugar
Sugar to taste
Begin by grating the chocolate and preparing the coffee. Then
pour the milk into a small saucepan and bring to the boil. Now
pour the prepared espresso into a heatproof jug (pitcher). Then
remove the pan from the heat and add 2 cups of the hot milk to
the coffee. Stir, then add sugar to taste.
Now return the pan containing the remainder of the milk to the
heat; then add 3 tablespoons of sugar and stir continuously until
the sugar has dissolved. Now bring the milk to the boil; then
turn down the heat. Next add the grated chocolate and stir continuously
until the chocolate has melted and the mixture becomes shiny and
smooth. Now pour the chocolate milk into the heatproof jug containing
the milky coffee and whisk well.
Then pour into coffee mugs and top with whipped cream and a light
sprinkling of cinnamon.
